Daniel: Filip, to start, I’d like to ask about the inspirations behind your seasonal menu. Where do you get ideas for such original drinks?
Filip: We draw inspiration from many sources, but mainly from travels, conversations with other bartenders, and experiments in our kitchen. We strive to create unique flavor experiences that are both surprising and enjoyable. Sometimes, a small discovery, like an unusual ingredient or technique, can evolve into an entirely new cocktail concept.
Daniel: One of the unique drinks on your menu is the Popstar Martini – a variation of the classic Pornstar Martini with a caramel popcorn aroma. Where did this idea come from?
Filip: Popstar Martini is the result of our playful approach to classics. We wanted to add something that evokes childhood memories but in a refined, adult form. Caramel popcorn was a perfect fit, as it provides a pleasant sweetness and a touch of nostalgia that pairs beautifully with the vanilla notes of vodka and the freshness of passion fruit. We aimed to create a drink that is not only delicious but also evokes emotions.
Daniel: Very interesting concept! Another drink that caught my attention is Show Me Love, based on vodka infused with butterfly pea flower. Could you explain what butterfly pea is and why you chose it as an ingredient?

Butterfly Pea – What Is It?
Filip: Butterfly pea flower is a plant whose petals are used to give drinks an intense blue color. It’s a completely natural dye, and it has an interesting property – when you add acid, like lemon juice, the color changes to purple. In Show Me Love, this “magic” color effect is further enhanced by prosecco, making the drink not only tasty but also visually stunning. As a garnish, we use a colorful gummy candy.
Daniel: That’s true artistry in a glass! How was the It’s Not A Quince cocktail developed? From what I see, it belongs to the dry cocktail family?
Filip: “It’s Not A Quince” is a modern cocktail that combines complex aromas and flavors to create an elegant yet surprising experience. It’s a creative interpretation of classic cocktails like Manhattan or Rob Roy, but with a fruitier and chocolatey touch:

- Gentleman Jack (Tennessee whiskey by Jack Daniel’s) 40 ml
- Cherry Heering (cherry liqueur) 20 ml
- Carpano Rosso (red vermouth) 20 ml
- Cacao bitter (bitter cocoa liqueur) 2-3 dashes
- Cocktail cherry as garnish

“It’s Not A Quince” means “This is not a quince” in Polish. The name suggests that while the drink may have flavor notes reminiscent of quince, it actually does not contain any, which adds an element of surprise and wordplay.

Daniel: What advice would you give to those who want to mix drinks at home? How do you choose ingredients for the perfect flavor combination?
Filip: The key to a perfect cocktail is balance and harmony. Ingredients should complement each other without one overpowering the others. Start with a main ingredient – your favorite alcohol or flavor you want to highlight – and then add complementary elements: something sweet, sour, bitter, or salty for balance. Testing and experimenting are crucial, as small adjustments can change the entire character of a cocktail. And remember – sometimes, less is more.
Daniel: That sounds amazing! Since we’re on the topic of aromas, can you tell us about Bumbu rum? What makes it special, and which cocktail based on it would you recommend?
Filip: Bumbu rum is a true gem in our menu, as it has a sweet and fruity aroma, with a distinct scent of tropical fruits, especially banana, surrounded by notes of caramel and buttery biscuit. In the background, you can detect subtle hints of oak and cinnamon. The taste is dominated by a pleasant sweetness of banana and vanilla, with a delicate touch of cinnamon. The finish is smooth and sweet, making this rum incredibly versatile.

- Peach Syrup – 20 ml
